To make this easy breakfast taco recipe you need a number of ingredients. Make sure you have the following ingredients on your grocery list:

  • Flour tortillas
  • Eggs
  • Bacon
  • Scallion
  • Avocado
  • Sun-dried tomatoes
  • Bell peppers
  • Fresh parsley
  • Olive oil
  • Salt and pepper
  • Baking product

How To Make Breakfast Tacos Without Cheese

Start this recipe by slicing the bacon, scallion, bell peppers, and sun-dried tomatoes. Then whisk the eggs and add some salt and pepper to taste. Set aside.

Heat a skillet until warm and add olive oil. Pan-fry the bacon until crisp. Add the bell peppers and sun-dried tomatoes.

Bake for about 5  minutes until the bell peppers are soft. Take the vegetable mix out of the pan and set it aside.

Warm the skillet again and add a baking product. Put the whisked eggs into the skillet and let it sit for 10 seconds before you stir them into scrambled eggs. 

Return the vegetable-bacon mix to your whisked eggs and stir on medium to low heat. Warm a second skillet and warm the 4 small tortillas on both sides. 

Cut the avocado in half and cut the half avocado into small cubes. Take a tortilla and put two or three tablespoons of egg on top.

Add avocado to the tortillas and sprinkle some finely chopped parsley on the tacos and you are ready to serve.

How To Store Breakfast Tacos?

If you are wondering you can make breakfast tacos ahead of time and reheat. You can store the filling separately or as a taco.

If you want to reheat your tacos do not cook the eggs to dry. Keep them slightly runny.

Let the filling cool completely before storing. You can store in several ways:

How To Reheat Breakfast Tacos

You have several options to reheat your breakfast tacos. You can reheat the filling or the complete tacos:

  • Oven – preheat your oven to 350℉. If you want soft tacos wrap them in aluminum foil else you can put them in an oven dish. Reheat for 5-10 minutes or until heated through
  • Air Fryer – preheat your Air Fryer to 325℉ for 3 minutes. If you want soft tacos wrap them in aluminum foil else you can put them in an Air Fryer. Reheat for 4-6 minutes or until heated through
  • Cast-iron skillet – preheat your cast-iron skillet to medium and put the tacos next to each other in the skillet. Let them warm slowly

Breakfast Tacos Recipe

Serves: 4 Prep Time: 5 minutes Cooking Time: 5 minutes

Ingredients

  • 4 tortillas
  • 3 eggs
  • 4 strips of bacon finely chopped
  • 1 scallion sliced
  • ½ avocado
  • ½ bell pepper finely chopped
  • Salt and pepper to taste

Instructions

  1. Slice the bacon, scallion, bell peppers and sun dried tomatoes
  2. Whisk the eggs and add some salt and pepper to taste. Set aside.
  3. Heat a skillet until warm and add olive oil. Add the bacon and pan fry the bacon until crisp. Add the bell peppers and sun dried tomatoes. Bake for about 5  minutes until the bell peppers are soft
  4. Take the bacon vegetable mix out of the pan and set aside

  8. Divide the avocado on the tortillas and sprinkle some finely chopped parsley on top. The tacos and you are ready to serve
