Easy Spanish Chorizo Rice Recipe

You can cook rice in a rice cooker, in the oven, or in a pan on the stove. The fourth way to cook rice is in an open skillet.

When you cook in an open pan you cook it paella style. So, all the ingredients are cooked in the pan and the rice is added to the pan.

Then stock is added and then the rice is cooked on a medium simmer.

Chorizo rice is also made using the open pan method.

What Is Chorizo Sausage?

Spanish chorizo is made from pork fat and chopped pork that is seasoned with garlic, salt, and smoked paprika.

It can be a spicy sausage and has a very overpowering taste.

You have two types of chorizos:

  • Fresh chorizo – these are made just like regular pork or beef sausage and available in the cooling section in your supermarket or at the butcher. You always have to bake the sausage first before serving or using it in a recipe
  • Cured chorizo – this means a chorizo sausage that is cured and air dried for a couple of months and dried out or smoked. You can use this sausage sliced as tapas or in your chorizo rice

If you have never tried chorizo, try the cured variety first. You do not need to cook it and you can thinly slice it.

Use the chorizo in moderation in the rice. You do not need a lot of diced chorizo to taste it in the rice.

Chorizo Rice Ingredients

To make this rice recipe you need a couple of ingredients. Put them on your grocery shopping list and have them ready when you start:

  • Cured chorizo sausage
  • Long grain rice
  • Chicken stock
  • White onion diced
  • Bell pepper
  • Tomato puree
  • Chili powder
  • Corn
  • Frozen peas
  • Black pepper 

When you cook chorizo, you do not need any oil as this sausage is made from pork which has enough fat.

The fat is released when you cook the sausage in a skillet. When you use cured chorizo, you still do not need oil.

Even though the sausage is air dried it still contains a lot of oil that releases while cooking it.

How To Make Chorizo Rice

To make this rice recipe start with slicing or dicing the chorizo, onion, tomato, and bell pepper.

Put a cast iron skillet or pan on the stove and heat to medium. Then add the chorizo into the pan and let the chorizo brown.

When chorizo releases fat you can add onion, bell pepper, and diced tomatoes. Stir until the onion and bell pepper are soft.

Then add the rice to the pan and toast the rice. Then add tomato puree and chili powder and stir before adding chicken stock.

Stir the rice and let the stock get to a medium simmer. After 5 minutes add the corn and peas.

Stir occasionally. If the water evaporates too fast add ¼ cup of water and stir until the rice is dry and done.

Should Chorizo Be Peeled Before Cooking

No, when you prepare chorizo, you can cook the sausage with the skin. You do not need to add any oil.

Chorizo has a lot of fat in the sausage that releases when heated. Do not heat the skillet or pan too high but cook on medium hot and the fat releases.

Cook until the whole sausage is browned. Add ¼ cup to ⅓ cup of water. Depending on how thick the sausage is this can take about 10 to 15 minutes.

You do not need to remove the skin if you use cured chorizo. Just slice or dice and cook it in a cast iron skillet.

How To Store Chorizo Rice

If you have leftover chorizo rice you have several ways to store it. In all cases let the rice cool completely first before storing:

  • Refrigerator – you can store the rice in the fridge. Put the cooled rice in an airtight food container, a resealable bag, and keep it in the fridge for up to 2 days
  • Freezer – if you want to keep the chorizo rice longer put it in the freezer. Store in a freezer-friendly food container for up to 2 days

How To Reheat Chorizo Rice

If you want to reheat your paella you have several options:

  • Paella pan – if you own a paella pan you can use it to reheat chorizo rice. Preheat the pan to medium and add your rice. Let it heat gradually, and stir regularly so all of the rice can warm. If you heat it too fast the outside of the rice can burn and the inside of the rice is still cold. This is what you want to prevent
  • Cast-iron skillet – you can also use a cast-iron skillet. Preheat the skillet to medium and add the rice. Let the rice heat gradually and stir regularly to warm all through
  • Oven – preheat the oven to 375℉. Add your rice into an oven dish and cover it with foil. Heat the rice for 15 minutes. Stir the rice and heat the rice uncovered for 5 minutes. Check if the rice is heated through
  • Air Fryer – you can also use your Air Fryer to heat a small amount of leftover rice. You can put the rice in a cake barrel and cover it with aluminum foil. Preheat your Air Fryer to 350℉ for 3 minutes. Then heat the rice for 10 minutes and 5 minutes uncovered

Why Is My Rice Still Hard?

When your rice is still hard it is most likely undercooked.

Rice is undercooked when:

  1. Not enough liquid – when there is not enough liquid for the rice to absorb and cook in the rice stays hard
  2. Cooking time – if the rice isn’t cooked long enough the rice will say undercooked. This can happen in combination with the amount of liquid for the rice
  3. Evaporate – when the liquid evaporates too fast and the rice can’t absorb the liquid resulting in hard rice.

Add more water when you see one of these things occurring.

Ingredients
