How do you make them? Easy, all you need is grated cauliflower and eggs. What do they taste like? You will be amazed at the taste and so will the rest of your family.
Do you remember when you were a kid and walk in the house thinking oh, oh it is cauliflower night? Just by walking through the front door, you knew.
The whole house was infused with the smell of cauliflower. I don’t know about you but it never really became my favorite dish.
“Just eat it, this is very nutritious.” my mom would say and so I obeyed.
When I left home I did not eat cauliflower a lot. It was not on my list of things to eat.
Not until a couple of years ago, did I find out that cauliflower is much more versatile than just a vegetable to cook?
It is so easy to turn it into:
- cauliflower fried rice
- roast in the oven
- use in stir-fry
- a cauliflower soup
So it is a small step to create these easy keto tortillas as these tortillas are low carb. They contain only 2.5 g of carbs and fit perfectly into a keto diet.
The best part is they do not even taste like cauliflower at all. The texture slightly resembles corn tortillas but the taste can not be compared.

Cauliflower Tortillas Ingredients
To make these low-carb tortillas all you need are the following ingredients:
- Cauliflower
- Eggs
- Dried parsley
- Salt and pepper
How To Make Cauliflower Tortillas
Start by grating the cauliflower extra fine, like fine grains of rice, in a food processor. Next, you need to warm the cauliflower to make sure all of the moisture is getting out.
Use the microwave but you can also put it in a steamer or put the cauliflower in a nonplastic sieve and put it on top of a pan with boiling water to steam.
When the heating/steaming is done put the cauliflower in a kitchen towel or cheesecloth and squeeze out all of the excess moisture.
Warning: The moisture from the cauliflower can be very, very hot so be careful when twisting all the moisture out.
Put the cauliflower in a bowl and add whisked eggs to the cauliflower. Stir to turn it into a creamy batter-like consistency.
Shape the cauliflower tortillas on a baking tin and in the oven they go. To give them a nice brown glow bake them in a hot skillet or cast-iron griddle without oil or butter.
Keep a close eye on the tortillas because they brown very easily. This can be a matter of seconds.
If you like you can add salt and pepper to taste. I forgot to use salt and pepper this time but frankly, I didn’t miss it.
By the way, if you are wondering where I got the ultra-cute wooden taco holder? These were a DIY project of my husband and you (or your hubby?) can make these as well.
Can You Make Cauliflower Tortillas Ahead?
Yes, these cauliflower tortillas are great to make ahead in a big batch. They store really well and you have several options to reheat them.
So if you are making these tortillas make a big batch and store them for future use.
How To Store Cauliflower Tortillas
There are several ways to store these cauliflower keto tortillas.
- Room temperature – if you plan on serving these tortillas within a day or 2 you can keep these tortillas at room temperature. Store them in a resealable Ziploc bag or a big airtight container
- Refrigerator – you can also store them for up to 4 days in the fridge. Let the tortillas cool completely before you put them in a Ziploc bag or food storage container
- Freezer – if you want to keep them longer you can store them in the freezer. Let them cool completely. To be able to separate them easier put some parchment paper in between the tortillas. Then put them in a Ziploc bag or food container
How To Reheat Cauliflower Tortillas
If you have leftover tortillas or made them in bulk and stored them you have several ways to reheat these tortillas.
- Cast iron skillet – an easy way is to reheat these tortillas in a cast iron skillet. Heat the tortillas to medium hot and add a tortilla. Heat for 30 seconds and turn and heat the other side as well. Check if the tortilla is warm
- Oven – you can also reheat them in the oven. Preheat the oven to 375℉ and wrap the leftover tortillas in aluminum foil. This will keep them soft and pliable. If you heat them on a baking sheet they will go hard. Heat for 5-7 minutes or until warm. You can reheat them from frozen and add 1 to 2 minutes to the baking time
- Air Fryer – if you have a small number of tortillas you can also reheat them in the Air Fryer. Preheat the Air Fryer to 325℉ for 3 minutes. Wrap the tortillas and heat for 4-5 minutes or until warm. You can reheat them from frozen and add 1 to 2 minutes to the baking time
Serve Your Keto Tortillas With

June 6, 2018 at 6:08 pmHi Sara,
Glad you like these! I have not tried but it might work to replace the eggs with aquafaba, the liquid that is in a can of chickpeas. I use aquafaba as an egg replacement in baking so maybe it works with these tortillas as well.
