An Amazing Quesadilla Recipe
Quesadillas are a perfect ingredient to also use for breakfast or lunch. In Mexico, you can find this bread in all meals.
So why not include it in your breakfast. It is easy to use and very versatile as it pairs well with either sweet or savory dishes.
Today we are using tortillas in a savory recipe.
As you will see the quesadillas are folded a little bit differently than what you may be used to.
We are using the folding technique, which is like wrapping a gift and fold the outside of a tortilla across the middle.
It makes cooking quesadillas this way, very easy. Cutting the quesadillas in triangles also looks very decorative.
Egg Quesadilla Ingredients
To make this recipe you only need about a handful of ingredients. Don’t like ham? Just leave it out or replace it with turkey.
Have the following ready when you start:
- Flour tortillas
- Eggs
- Ham
- Shredded cheese
- Butter
- Salt and pepper to taste
How To Make Egg Cheese Quesadillas
To make this recipe start with a small bowl and whisk one egg at a time. Season the egg with salt and pepper.
Then preheat a nonstick skillet to medium-hot and add butter before adding the whisked egg into the skillet. Let the egg sit for 20-30 seconds so it can turn a little bit solid.
Put a tortilla on top of the egg so it can stick to the tortilla. Flip the tortilla with egg omelet in the pan and turn down the heat to medium.
Then put a slice or chopped ham on top of the egg and add about ¼ to ½ cup of shredded cheese on top.
Fold the tortilla omelet in thirds like you would wrapping a gift and seal the tortilla. Turn the tortilla and bake until the tortilla turns a golden brown.
Be careful as a tortilla can burn very easily. Take the quesadilla out of the pan and cut it into triangles.
Repeat for the remaining quesadillas.
What Is The Best Cheese For Quesadillas?
You can use a variety of shredded cheeses or a combination of cheese in your quesadillas like:
- Gouda
- Gruyere
- Cheddar
- Mozzarella
Quesadilla Ingredient Options
Besides the ham, you can add even more delicious ingredients to your egg cheese quesadilla like:
- Sun-dried tomatoes
- White onion
- Red onion
- Mushrooms
- Bacon
- Red pepper
Can You Make Egg Quesadillas Ahead?
Yes, you can make these egg cheese quesadillas ahead of time. They are great for meal prep. As long as you do not add lettuce to the quesadilla you are good to go.
Lettuce does not store well.
How To Store Egg Quesadillas
You can store egg cheese quesadilla in various ways. In all cases let them cool completely before storing:
- Refrigerator – you can store egg cheese quesadillas in the fridge for a day. Let them cool completely first and store them in an airtight food container
- Freezer – my preferred way of storing quesadillas is in the freezer. So if you want to keep them longer store them in the freezer. Put them in a freezer-friendly food container or in a Ziploc bag. You can store them in the freezer for 2 months
How To Reheat Egg Cheese Quesadillas
When you want to reheat these quesadillas let them thaw in the refrigerator.
- Cast-iron skillet – Take a cast-iron skillet and heat to medium. Add a teaspoon of oil and brush the bottom of the skillet. Then put the quesadilla in the skillet and warm it through. This takes a couple of minutes
- Oven – you can also reheat the quesadillas in an oven. Preheat the oven to 350℉ and wrap the leftover quesadillas in aluminum foil. Reheat the quesadillas for 5 minutes or until warm
- Air Fryer – you can also reheat quesadillas in an Air Fryer. Preheat the Air Fryer to 325℉ for 3 minutes. Wrap the quesadillas in tin foil and warm for 3 minutes or until warm
You can also use a microwave to reheat quesadillas. It is not my favorite method but it is a fast method. Put the quesadillas on a microwave-safe plate and heat them at full power for 30 seconds.
Check to see the quesadillas are warm else repeat.

A very simple yet tasty quesadilla these egg cheese quesadillas and are on the table in no time. You can add more tasty ingredient options.
Ingredients
- 4 tortillas
- 4 eggs
- 4 slices of ham
- 1-2 cup of shredded cheese
- 2 tablespoons butter
- Salt and pepper to taste
Instructions

- flip the tortilla with egg omelette in the pan

- Fold the tortilla omelette in thirds like you would wrapping a gift and turn the tortilla until the tortilla turns a golden brown
- Be careful as a tortilla can burn very easily
