This is such a fun, appetizing and festive recipe. It has color due to the vegetable, tortillas, and eggs and tastes amazing due to the tomato stew.
Just looking at this recipe will make you happy. These huevos rancheros are done in less than 20 minutes and a feast for your eyes and your mouth.
These taco rancheros are made with:
- Lentil tortillas
- Eggs
- Beans
- Tomato
- Cheese
Of course, you can use regular flour tortillas or your favorite tortilla in this recipe.
You can make this recipe and serve it for breakfast or lunch. Add some baked potato and you have a hearty dinner.
The main idea is to bake up vegetables and eggs in a skillet. All the other ingredients are optional and can be chosen to your liking.
This recipe is in essence a vegetable stew with eggs.
Huevos Rancheros Tacos Ingredients
To make this recipe you need the following ingredient on your shopping list:
- Lentil tortillas tacos
- Eggs
- Cherry tomatoes
- White onion
- Red onion
- Feta cheese
- Kidney beans
- Scallion
- Vegetable oil
- Salt and pepper to taste
How to Make Huevos Rancheros Tacos
Cut the tomatoes into 8 parts and finely dice the onion, slice your red onion and scallion. Heat a skillet on medium to high heat with vegetable oil.
Sauté the diced onion until soft and translucent.
Add the cherry tomatoes. Stir and break down the tomatoes with a wooden spoon until you get a thick tomato sauce.
Let the sauce simmer on medium heat. then set aside. Season the tomato sauce with salt and pepper to taste.
Warm the red lentil tortillas in a pan or preheat your oven to 375℉ while you wrap your tortillas in aluminum foil.
Add the tortillas into the oven and warm for 7 minutes or until warm.
In the meanwhile, pan-fry three eggs with some butter and take the skillet off the heat. Set aside.
Now it is time to plate the tacos. Start with a lentil tortilla then add some tomato mix.
Put a tablespoon of kidney beans on the tomato sauce and sprinkle slices of red onion and scallion on top.
Then put a fried egg on the taco. Decorate with the feta cheese and you are ready to serve.
How to Store Huevos Rancheros
You can store huevos rancheros but it is recommended to cook your eggs when you are ready to serve.
- Refrigerator – you can store the tomato-covered tortilla in the fridge. Either wrap the tacos individually or add them to an airtight food container and store them for up to 2 days. Add some fried eggs when you are ready to serve
- Freezer – want to keep them longer store the leftover taco rancheros in the freezer. Put them in a freezer-friendly food container for up to 2 months. Serve with a fresh fried egg when you are ready to serve
How to Reheat Tacos Rancheros
You have several ways to reheat your huevos rancheros tacos:
- Skillet – an easy way to reheat this recipe is to put the filling in a skillet. If the sauce is very thick, add a couple of tablespoons of water and warm gradually. Heat your tortillas in another skillet, fry an egg and assemble the tortillas
- Oven – when you wrapped the whole taco ranchero you can reheat it in the oven. Preheat the oven to 375℉ and add the wrapped tacos to the middle of the oven. Warm for 7 to 10 minutes or until hot. Fry an egg and put it on top of your taco
- Air Fryer – you can also reheat a taco ranchero in an Air Fryer. Preheat the oven to 350℉ and add the wrapped tacos to the Air Fryer basket. Warm for 5 to 7 minutes or until hot. Fry an egg and put it on top of your taco. Serve immediately

Huevos rancheros tacos are the best breakfast recipe that you can make on a weekend or for a festive lunch. Lets get started!
Ingredients
- 3 red lentil tortillas

- 8 cocktail tomatoes
- ½ chopped white onion

Instructions
