There are many varieties of Migas that are actually a different dish. Migas is made in Spain, Portugal but also Mexico.

  • Spanish and Portuguese Migas – use bread and meat, while the Mexican or Tex-Mex version has tortilla as the main ingredient.
  • Mexican or Tex-Mex Migas – is, in fact, a breakfast recipe. However, with all of the vegetables and eggs in this recipe, I much more like to eat is for brunch or lunch.

In the authentic Migas, the corn tortilla is the main ingredient but you can also use flour tortilla it works just as well.

Migas is also a great recipe if you have some stale tortillas lying around and no idea what to do with them.

Tortilla Migas Ingredients

To make this Migas recipe you need more than just a handful of ingredients. This recipe requires some shopping as you need:

  • Eggs
  • Nonfat milk
  • Red bell pepper
  • Yellow bell pepper
  • Onion
  • Sun-dried tomatoes
  • Cherry tomatoes
  • Mushrooms
  • Flour or corn tortilla
  • Mozzarella
  • Parsley
  • Oil olive

How To Make Migas With Tortillas 

This is a regular one-pan recipe with lots of fresh vegetables, eggs, milk, and tortilla. Start by whisking the eggs and non-fat milk together.

Add salt and pepper to taste. Set these aside. Then cut flour or corn tortillas into small wedges and pan-fry them in a skillet with oil.

When they are golden brown take them out of the pan and set aside as well. Now it is time to sauté the:

  • Red bell pepper
  • Yellow bell pepper
  • Onion
  • Cherry tomatoes
  • Mushrooms

Stir regularly until the ingredients are soft. Take the bowl of pan-fried tortillas and put them on top of the vegetable mix.

Stir through before adding the egg mixture to the pan. Turn the heat to medium and let the Migas simmer for about 10 minutes until all of the egg has turned solid.

Decorate with sun-dried tomatoes and serve.

Optionally, you can add Mozzarella cheese on top of the Migas as well as some dried parsley. Your lunch dish is ready to serve immediately.

What Is The Difference Between Migas And Chilaquiles?

If you have seen the chilaquiles recipe you see that it has a lot of similarities with Migas:

  • Breakfast recipe – both recipes are breakfast recipes that you can eat for lunch
  • Eggs – both recipes contain eggs
  • Tortillas – both recipes are made with tortillas

But what makes them different?  

  • Migas consists of pan-fried (corn) tortillas and smothered in scrambled eggs, sun-dried tomatoes, and cheese
  • Chilaquiles is more a casserole type dish. Made up of fried tortillas, beans, vegetables, and topped with eggs and cheese. Set in the oven to warm through

Lovely tortilla Migas recipe

Serves: 4 Prep Time: 5 minutes Cooking Time: 15 minutes

  • 3 eggs
  • 2 flour or corn tortilla cut in wedges
  • 1 cup of nonfat milk
  • ½ diced red bell pepper
  • ½ diced yellow bell pepper
  • ½ diced onion
  • 6 sun-dried tomatoes
  • 6 cherry tomatoes halved
  • 5 sliced mushrooms
  • ½ cup of Mozzarella
  • 1 tsp of dried parsley
  • 3 tbsp of oil olive


  1. Whisk 3 eggs and the milk in a bowl set aside
  2. Heat 2 tbsp of olive oil and pan fry the tortilla wedges. When golden brown take out of the pan and set aside
  3. Heat 1 tbsp of olive oil and saute the bell peppers, onion, cherry tomatoes and mushrooms until soft
  4. Now add the pan fried tortilla wedges and stir through the vegetables
  5. Lower the heat to medium before adding the egg mixture
  6. Add the sun dried tomatoes
  7. Simmer for 10 minutes
  8. Optional add some Mozzarella cheese and parsley
  9. Ready to serve
