You can serve them with soft flour tortillas or crispy taco shells. Both are equally tasty.

You can make the chicken carnitas in advance and store them in your fridge so you have them ready when you want to assemble this dish.

This is a great example of how to assemble dinner. Just prepare the dishes in advance and put them together when you are ready.

Mexican Street Corn Tacos Ingredients

To make this taco recipe you need quite some ingredients. Put the following ingredients on your grocery shopping list and have them ready when you start:

  • Flour tortillas
  • Avocado

Street corn salad

  • Canned corn or frozen corn
  • Vegetable oil
  • Cotija cheese
  • Pickled jalapeño pepper
  • Mayonnaise
  • Lime juice
  • Garlic
  • Homemade chili powder
  • Dried coriander
  • Salt

Chicken carnitas

This Mexican street corn salad recipe is on the table in less than 20 minutes. Skillet toasted sweet corn with a lovely dressing. Make with fresh corn kernels, canned sweet corn or frozen corn. How To Make Mexican Street Corn Tacos

To make this recipe start with the chicken carnitas. Finely chop the onion and garlic.

Take your Instant Pot and add chicken breast, taco seasoning, chopped onion, minced garlic, lime juice, orange juice, and beer.

Finish with tomato salsa. Close the lid and select the Meat/Stew option and turn it to 30 minutes.

In the meanwhile, heat a skillet to medium-hot and add oil. Mince garlic and jalapeños.

Add the corn and stir to combine. Toast the corn until they turn golden brown (this takes about 15 minutes).

Put the toasted corn in a bowl. Add the mayonnaise, the lime juice, the minced jalapeño, the dried coriander, chill powder, and stir to combine.

Crumble the cotija cheese on top.

When chicken is cooked. Turn on the broiler of your oven or your Air Fryer.

Shred the chicken in the meanwhile and put it on a baking tray. Take 4 to 5 tablespoons of liquid from the Instant Pot and sprinkle on the shredded chicken.

Broil the chicken for 5 minutes or until golden and crispy.

Warm your tortillas for half a minute on both sides in a cast-iron skillet. Then plate your tacos.

Take a couple of tablespoons of street corn salad, add chicken carnitas, and top with diced avocados.

Serve immediately.

Can You Make Mexican Street Tacos Ahead?

Yes, but I recommend you make the separate dishes ahead of time and assemble them when you are ready to serve.

That way your tortillas do not get soggy and wet from the corn salad and everything tastes its best.

How To Store Mexican Street Tacos

As mentioned with the separate dishes it is best to make them fresh. You can make them ahead and store them.

Let all the dishes cool completely before storing.

  • Refrigerator – the street corn salad can be stored in the fridge for up to 3 to 4 days. Store it in an airtight food container. The same applies to the chicken carnitas
  • Freezer – want to keep it longer you can also store it in the freezer. Again put the prepared dishes in a freezer-friendly food container and store up to 1 month for the street corn and 3 months for the chicken carnitas

Mexican Street Corn Tacos With Carnitas

Serves: 4 Prep Time: 5 minutes Cooking Time: 45 minutes

Ingredients

  • 4 flour tortillas
  • 1 avocado
  • Mexican street corn salad
  • 2 cups canned sweet corn or thawed frozen corn
  • 1 tablespoon vegetable oil
  • 3 tablespoons crumbled Cotija cheese, plus more for garnish
  • 1 tablespoon pickled jalapeño pepper
  • 1 tablespoon mayonnaise
  • ½ tablespoon lime juice
  • 1 clove garlic
  • 1½ teaspoons chili powder
  • 1 teaspoon dried coriander
  • Pinch of salt
  • Chicken carnitas
  • ½ lb chicken breasts
  • 2 cloves garlic
  • 1 onion
  • 1 tbsp taco seasoning
  • 1 tsp lime
  • ⅓ cup orange juice
  • 1 can beer (25 cl)
  • ⅓ cup salsa

Instructions

  1. Start with the chicken carnitas. Finely chop the onion and garlic
  2. Take the Instant Pot and add chicken breast, taco seasoning, chopped onion, minced garlic, lime juice, orange juice, and beer
