What Is A Quesadilla?
Quesadilla is a Mexican dish that is made with corn or flour tortillas filled with different ingredients and cheese as the base.
It is usually folded in half and cooked or fried on a comal, skillet, or grill.
A quesadilla is like the Mexican version of a grilled cheese sandwich.
In some cases, meat, poultry, spices, vegetables, and other ingredients are used.
Quesadillas are traditionally made with corn tortillas and are about 6 inches big but quesadillas are also made with flour tortillas.
Quesadillas are either made with two tortillas with filling in between or the half-moon version where a bigger tortilla is folded with filling in between.
Traditionally the Mexican quesadilla is only filled with cheese Oaxaca cheese to be exact.
Besides the traditional quesadillas you also have the American quesadillas that are made with different types of cheese:

- Monterey Jack
- Colby Jack
The cheese needs to melt and other ingredients like meat, vegetables, and guacamole are added.
The quesadillas are cut into wedges.

How To Cook Quesadillas
In Mexico, a comal is used to cook a quesadilla but if you do not have a comal you can cook your quesadilla in a cast-iron skillet.
Usually, a quesadilla is cooked with a bit of oil or cooking spray but you can also fry a quesadilla in oil and it will be a quesadilla frita.
A quesadilla frita is similar to an empanada.
