Shawarma Spice Mix Recipe

After all the Mexican seasoning it is now time to share a new seasoning favorite and that is shawarma seasoning or shoarma as we call it here in the Netherlands.

Just like with all of the seasoning mixes I make this one is also tailored into a spice mix that you love. Not too salty, not too peppery but a balanced combination of spices and flavors your shawarma needs.

Just tinker with it until you find your perfect blend. This spice mix can turn any meat or poultry into a delicious dish.

Originally shawarma was made from lamb or mutton thinly sliced, seasoned, and stacked on a vertical rotisserie.

It rotates and when it is time to eat the meat is shaved off the vertical rotisserie.

When you buy shawarma in a restaurant the shaved meat is baked with some onion on high heat before it is stuffed into pita bread.

How To Make Shawarma Seasoning

To make this seasoning you need to measure all of the ingredients as mentioned in the recipe and put these in a bowl.

I grind the cloves fresh in my pestle and mortar but you can buy ground cloves as well.

It is really important to mix your seasoning properly for at least a minute.

As you are using cayenne pepper and black pepper you want this to be evenly distributed throughout your spice mix.

Instead of cayenne pepper, you can use hot chili powder (not the seasoning mix) instead. Chili has the same type of heat and intensity as cayenne pepper.

If you do not like spicy mixes you can omit the cayenne pepper but I would urge you to try it first. Good shawarma needs a little bit of heat and the amount in this spice mix is properly balanced.

Once you have stirred it through for at least a minute you can store the seasoning in a glass jar. This will preserve the seasoning best.

This seasoning does not have any additives, no preservatives and if you buy biological spices, it does not get any better than this.

How To Use Shawarma Seasoning

This seasoning mix can be used dry or in a wet marinade. Take 2 tablespoons spice mix and either rub on the meat or add to 2 tablespoons olive oil.

When you make it into a wet marinade mix the spice mix and oil. Stir to combine and then add to your meats.

Marinate your poultry or meat for at least 15 minutes or overnight.

      Hi Tonie,
Thank you for your comment. I hope I can help out and take away the confusion:
Cilantro is Spanish for coriander. I use both in my descriptions but understand it might be confusing so I updated the recipe, to only use cilantro.
As mentioned in the description you can either use cayenne or hot chili pepper as it has the same heat and intensity. I have added this to the recipe notes as well.

      Hope this helps

I can’t wait to try this recipe. However if possible can you give an idea of how much of this seasoning mixture is needed to season meat when preparing? Does it need marinating time? Helps to know how far all the measuring will go to have it ready. Thank you!

      Jen,
I usually use 2 tablespoons per pound of meat. You can adjust from there if you want to add more. You can combine the seasoning with olive oil and rub it on the meat. Let it marinate for 15 minutes if you are in a hurry or longer if you have more time. You can find two shawarma recipes here that use this spice mix as well so take a look.
      Have fun trying this recipe!
